No-Bake Peanut Butter Oat Bars (Soft & Chewy!)
There’s this moment that happens around 3pm where suddenly everyone in the house is hungry. Not dinner hungry. Just snack hungry.
The kind where you start opening cabinets and somehow end up eating crackers over the sink or that grainy protein bar you’ve had one too many times to be enjoyable anymore.
That was me last week when I realized we had oats, peanut butter, and honey sitting there doing nothing.
About ten minutes later these bars were in the fridge and honestly… they might be the easiest snack I’ve ever made.
What I like about these is they feel homemade without being a whole baking project. No oven. No weird ingredients. Just a few pantry things mixed together and pressed into a pan.
And somehow they turn into these soft, chewy peanut butter oat bars that disappear faster than you’d expect. My boyfriend ate three before dinner and then acted confused about where they went.
If you like simple snacks that taste like something you’d buy at a cafe but cost way less, you’ll probably end up making these more than once.

Why These Peanut Butter Oat Bars Work So Well
A lot of no bake oat bars out there end up kind of… grainy. Or dry. Or they fall apart the second you pick them up.
These ones fix that.
The trick is lightly pulsing the oats before mixing everything together. It sounds small but it changes the texture completely. Instead of big chunky oats everywhere you get this soft, chewy bite that holds together way better.
Another small thing that helps is warming the peanut butter and honey together. It melts into a smooth mixture that coats the oats evenly. When the bars chill in the fridge they firm up but stay soft enough to bite into.
Basically they feel more like a real snack bar and less like a pile of oats pressed into a square.
Ingredients You’ll Need
You only need a few simple ingredients for these bars.
- 1 cup creamy peanut butter
- ½ cup honey
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 2½ cups rolled oats
- ¼ teaspoon sea salt
Optional but very good idea:
- ¼ cup mini chocolate chips
Most of this stuff is probably already in your kitchen. Which is kinda the best part.

How To Make No-Bake Peanut Butter Oat Bars
These come together pretty fast so it’s a good idea to have the pan ready first.
Line an 8×8 baking pan with parchment paper so the bars lift out easily later.
Next, place the oats in a food processor and pulse them a few times. Not until they turn to powder. Just enough so some oats break down and mix with the whole ones. This is what makes the bars smooth instead of grainy.
In a saucepan over low heat combine the peanut butter, honey, and coconut oil. Stir until everything melts together and looks completely smooth.
Take it off the heat and stir in the vanilla and salt.
Add the oats and mix until they’re coated. It might look a little thick but thats normal.
If you’re adding chocolate chips, let the mixture cool for a minute first so they don’t melt.
Press everything firmly into the pan. Really press it down so the bars hold together later.
Place the pan in the fridge for about 45 to 60 minutes until set. After that you can lift it out and cut it into squares.

Tips To Make These Bars Even Better
A few small things can make these turn out really good.
Pulse the oats first
Pulse. Pulse. Pulse! This is the biggest trick. Whole oats alone can make the bars feel rough. Breaking some of them down makes the texture softer.
Press the mixture firmly into the pan
If you kinda loosely spread it the bars might crumble later.
Let the mixture cool before adding chocolate chips
Otherwise you’ll end up with chocolate streaks instead of chips. Still tastes good though honestly.
Add a tiny pinch of extra salt
Peanut butter and honey together can be pretty sweet. A little salt balances it out.
How Many Bars This Recipe Makes
If you cut the bars in a standard grid you’ll get 16 squares.
You can also cut them smaller and get 20 snack sized bars, which is usually what I do since they’re pretty filling.

If cut into 16 bars, each bar is about:
- 180 calories
- 6g protein
- 18g carbs
- 9g fat
If cut into 20 smaller bars, each one is around:
- 145 calories
- 5g protein
Not bad for something that tastes like an absolute treat.
How To Store These Bars
These bars keep best in the fridge.
Store them in an airtight container and they’ll last about one week. They actually taste better chilled because they stay firm and chewy.
You can also freeze them for up to three months. Just let them sit out for a few minutes before eating.
Easy Variations To Try
Once you make these once you’ll probably start experimenting.
Some ideas that work really well:
Chocolate peanut butter bars
Stir cocoa powder into the peanut butter mixture.
Peanut butter banana bars
Mash half a banana and mix it in with the wet ingredients.
Almond butter version
Swap peanut butter for almond butter for a slightly different flavor.
Coconut oat bars
Add shredded coconut for a chewy texture.
Honestly these are one of those recipes where it’s kinda hard to mess them up.
No-Bake Creamy Peanut Butter Oat Bars
Ingredients
- 1 cup creamy peanut butter
- ½ cup honey
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 2½ cups rolled oats
- ¼ teaspoon sea salt
Instructions
- Line an 8×8 pan with parchment paper.
- Place the oats in a food processor and pulse 4–5 times until slightly broken down. You want a mix of fine and whole oats. This removes the grainy texture.
- In a saucepan over low heat, combine peanut butter, honey, and coconut oil. Stir until completely smooth.
- Remove from heat and stir in vanilla and salt.
- Add the oats and mix until fully coated. If using chocolate chips, let the mixture cool for 1–2 minutes before stirring them in.
- Press the mixture firmly into the pan using the back of a spoon.
- Refrigerate 45–60 minutes until set, then cut into bars.
